Roasted Pumpkin With Chick Pea
All-in-one nutritional Vegan dish

- 1 half
Japanese pumpkin,
, Roasted with skin on - 1 Onion,, chopped
- 3 cloves Garlic, Chopped
- 4 tbsp olive oil, extra virgin
- 2 tbsp Belicious Portuguese Spice https://belicious.com.au/product/belicious-portuguese-flavoured-spice/
- 2 tbsp Belicious Piri Piri https://belicious.com.au/product/piri-piri-150ml/
- 1 can diced tomato, organic
- 4 cups chick peas, previously boiled, keeping the water
- 1 cauliflower, cut in florets
- 1 punnet green beans, cut in diagonal pieces
- 1 500 g packet pasta shells "lumache", previously boiled in salted water to "al dente"
- salt to taste
Now the fun begins!
- Remove pumpkin seeds with a spoon and cut in big pieces, set aside
- In a big skillet, sautée the onion and garlic until brown
- Add can of tomatoes, cook for 5 min
- Add salt to taste, Portuguese spice and piri-piri, cook for 2 min
- Add cauliflower and green beans, simmer for 10 min
- Add chick peas with the water it was cooked in and roasted pumpkin, simmer another 5 min on high heat
- Serve with pasta shells
