Paella is undoubtedly Spain's national dish, with Valencia its epicentre. It was traditionally a labourer's dish, and paella was originally the name of the flat pan used to cook it in. These days, every region in Spain has its own version. For protein, you can use chicken thigh, any seafood - mussels and prawns in particular, or a marinara mix - and, of course, chorizo sausages.
