Coconut Chicken Curry

Shopping list!

  • 2 tbsp Belicious Masala
  • 3 tbsp oil
  • 4 cloves garlic, chopped
  • 1 onion, chopped
  • 1 tbsp fresh ginger, grated
  • 2 red capsicums, chopped
  • 3 tomatoes, chopped
  • 1 can coconut milk
  • 1 kg chicken breast
  • 250 g frozen baby peas
  • 1 bunch fresh coriander
  • rice to serve

Now the fun begins!

  • Sautee Onion + Garlic, in oil
  • Add ginger gratings, stir
  • Add capsicum, stir until soft
  • Add Belicious Masala into the mix, stir
  • Add tomoatos, cook on medium heat for about 7 min, adding a bit of water if needed
  • Add the coconut milk, bring to the boil
  • Add diced chicken, stir, let it cook on medium heat for 20 minutes
  • Add peas and let it cook for another 5 minutes
  • Remove from heat
  • Chop most of the fresh coriander, mix into the pot, keeping some for decoration
