Coconut Chicken Curry

Shopping list!
- 2 tbsp Belicious Masala
- 3 tbsp oil
- 4 cloves garlic, chopped
- 1 onion, chopped
- 1 tbsp fresh ginger, grated
- 2 red capsicums, chopped
- 3 tomatoes, chopped
- 1 can coconut milk
- 1 kg chicken breast
- 250 g frozen baby peas
- 1 bunch fresh coriander
- rice to serve
Now the fun begins!
- Sautee Onion + Garlic, in oil
- Add ginger gratings, stir
- Add capsicum, stir until soft
- Add Belicious Masala into the mix, stir
- Add tomoatos, cook on medium heat for about 7 min, adding a bit of water if needed
- Add the coconut milk, bring to the boil
- Add diced chicken, stir, let it cook on medium heat for 20 minutes
- Add peas and let it cook for another 5 minutes
- Remove from heat
- Chop most of the fresh coriander, mix into the pot, keeping some for decoration
