Roast Pumpkin & Chickpea Pasta Dish

Shopping List

Ingredients

Half a Japanese Pumpkin (roasted with skin on)
1 finely chopped onion
3 cloves diced garlic
4 tbsp olive oil
2 tbsp Belicious Portugese Spice
2 tbsp Belicious Piri Piri Sauce
1 can diced tomato
4 cups boiled chickpeas (and the water they were boiled in)
1 cauliflower, cut into florets
1 punnet green beans, chopped
1 500 g packet pasta shells "lumache" (previously boiled in salted water to "al dente")

Let's Cook!

1. Remove pumpkin seeds with a spoon and cut in big pieces, set aside.
2. In a big skillet sautée the onion and garlic until brown.
3. Add can of tomatoes and cook for 5 min.
4. Add salt to taste, Belicious Portuguese Spice and Belicious Piri-Piri, then cook for 2 min.
5. Add cauliflower and green beans, simmer for 10 min.
6. Add chick peas with the water it was cooked in and roasted pumpkin, simmer another 5 min on high heat.
7. Plate up with pasta and enjoy!
