Potato and Kale Soup with Garlicky Chorizo – “Caldo Verde”

It's time to fall in Love with this very popular Portuguese Soup, Australia!
Even Jamie Oliver has a version!
Here's the Belicious version;
Caldo Verde
(Green Soup)
- 1 kg Potatoes, peeled and cut in half
- 2 Bunches Chinese Broccolli OR Kale, chopped very thin or shredded in the food processor
- 1 small chorizo, cut in slices
- 3 cloves garlic, chopped or mashed
- 4 tbsp olive oil
- 1 shallow teaspoon Belicious Portuguese Spice
Let's Cook!
- Cover potatoes with water and boil until soft, adding salt to taste
- Mash potatoes in the water with a stick blender
- Add chinese broccolli / kale, cook for 15 min or until done
- Fry garlic, Portuguese Spice and chorizo in the olive oil until fragrant, set aside
- Once the soup is cooked, add the Chorizo mix and stir.
- Serve with Rye Bread
**Note: You can use Kale instead of Chinese broccoli, but it’s tougher so it will need longer cooking
