One Pot Fish and Potato Stew
Shopping List
700 g Dory Fillets
350 g Leather Jacket fillets
1 onion, sliced
3 tomatoes, sliced
200 ml extra virgin olive oil
1 kg Potatoes, peeled and cut in thick slices ( about 3cm)
100 ml white wine
4 cloves garlic, chopped
150g Green Beans, topped and tailed, then chopped thin
salt to taste
2 tbsp Belicious Portuguese Spice
2 tbsp Belicious Piri-Piri
Let's Cook!
1. In a sauce pan, drizzle half the olive oil
2. Layer the fish on top of it, the potatoes, tomato, garlic, salt, the onion, the garlic and the green beans
3. Scatter the Portuguese Spice on top and drizzle the Piri-piri, finishing off with a drizzle of the rest of the olive oil and the wine
4. Switch the heat to high, and bring to a boil
5. Switch to medium-low, close lid and let it cook for 30 min until potatoes are soft
6. Open the lid and shuffle with a wooden spoon, to bring all the food and spices into the sauce, taking care not to break the fish
7. Close lid and cook for an extra 10 min.
Use Olive Oil of good quality, this is the main feature here making a huge difference in the taste
*The potatoes should be whole but soft enough to eat
We used Sebago Potatoes
Let it rest for 10 min before serving
