Ingredients

Prawn Marinade:
1 kg uncooked King prawns, shells on and butterflied
2 cloves garlic – smashed
1 small glass of white wine
2 tbsp Belicious Portuguese Spice Mix
1 tsp Salt

Prawn Piri-Piri and Lemon Butter Drizzle Sauce:
4 tbsp butter
Juice of a small lemon
1 teaspoon flour, dissolved in 2 teaspoons of cold water
2 tbsp Belicious Piri Piri
Salt to taste

Let's Cook!

1. Butterfly the prawns under gentle running water by cutting open the backs using a sharp serrated knife , until they are just able to fold open.

2. Remove the dark vein and let the water wash away the yellow in the heads. Do not remove the shells or heads.

3. Add the prawns in the marinade making sure there is plenty covering the flesh side. Cover and place them in the refrigerator and allow them to marinate for at least two hours or overnight.

4. Heat a pan or hot plate, then grill the prawns flesh side down for approximately 2 minutes. Flip over and grill shell side for 1 minute or until pink.

5. Place all the Drizzle Sauce Ingredients in the microwave for 1.5 minutes. Take out, stir and drizzle over the prawns.

Enjoy with rice and salad
