Shopping List
  • 3 tbsp Belicious Masala
  • 3 tbsp olive oil
  • 2 cloves garliccrushed
  • 1 onionchopped
  • 1 red capsicumchopped
  • 2 tbsp gingergrated
  • 2 tbsp white wine vinegar
  • 1.5 cups water
  • 1 kg chickencubed
  • 1/2 cup coconut cream
  • 3 mangoeschopped
  • Basmati riceto serve
Let's Cook!
  1. Heat oil in pan, sauté onion
  2. Add capsicum and cook for 2 minutes
  3. Add Belicious Masala, ginger and garlic, cook for 2 minutes
  4. Add vinegar, water and chopped mangoes, increase heat and bring to boil
  5. Lower heat and simmer for 15mins, stirring occasionally
  6. Remove from heat and puree. Return to heat
  7. Add chicken to pan and return to a slow simmer
  8. Cover pan and cook for 20 minutes or until done
  9. Stir in coconut cream, cook over low temperature for 2 minutes
